We've created two easy autumn recipes that put our Cajun Marinade at centre stage, perfect for cosy suppers and weekend treats.
Cajun Chicken & Sweet Potato Stew
Serves: 2
Time: 30-35 minutes

Ingredients:
4 chicken thighs
Lincolnshire Drizzle Cajun Marinade
2 medium sweet potatoes, cubed
1 tin chopped tomatoes
1 tin chickpeas, drained
1 onion, diced
250ml chicken stock
Method:
Drizzle enough marinade over the chicken to coat and leave for about an hour, or longer if you have time.
In a large pan, fry the onion in 2-3tbsp of marinade until softened. Add chicken and cook until browned. Add sweet potatoes, chickpeas, tomatoes, and stock. Simmer for 25–30 mins until thick and hearty.
Serve with rice or crusty bread.
A warming one-pot dish packed with autumn flavour
Cajun Spiced Roasted Veggie Traybake

Serves 4 as a side, 2 as a main
Mushrooms halved
2 courgettes, sliced
1 red onion, quartered
1 red pepper, chopped
4 tbsp Lincolnshire Drizzle Cajun Marinade
Method
Preheat oven to 200°C.
Toss all the veg with the Cajun Marinade until evenly coated.
Spread on a baking tray and roast for 40 - 45 minutes until caramelised and golden.
Serve hot with grilled chicken, or in wraps with avocado, sour cream and salsa.
Cajun Cooking Tips
Marinate for depth — Even 20 minutes makes a difference, but leaving your meat or veggies in our Cajun Marinade overnight brings out the boldest flavour.
Balance the spice — Cajun cooking is all about heat and heart, but pair spicy mains with creamy sides (think mashed potatoes, yoghurt dips, or coleslaw) for a perfect contrast.
