Summer days & sweet chilli flavours

There’s something special about late summer with it's long golden evenings, the scent of BBQs in the air, and weekends that feel like mini holidays. With the August Bank Holiday just around the corner, it’s the perfect excuse to pack up a picnic, gather your favourite people, and enjoy good food in the sunshine.


Summer eating should be simple, vibrant, and full of fresh flavour and our Sweet Chilli Dressing is just the thing to make it happen. Made with Cold Pressed Rapeseed Oil (naturally rich in Vitamin E and Omega 3) and real ingredients, it’s more than just a salad topper. Sweet, tangy, and with just a hint of gentle heat, this dressing is a warm-weather favourite for foodies who love easy, delicious meals.


Sweet Chilli Roasted Veg & Cous Cous Salad

Serves: 4 as a side | 2 as a main l Prep time: 10 mins | Cook time: 25 mins

Ingredients:

  • 2 red peppers, sliced into strips

  • 1 large red onion, sliced into wedges

  • 200g cherry tomatoes (whole or halved)

  • 3 tbsp The Lincolnshire Drizzle Company Sweet Chilli Dressing (plus extra for serving)

  • 150g cous cous

  • 300ml hot vegetable stock

  • Fresh parsley, chopped (optional)

  • Salt & pepper, to taste






Method:

  1. Preheat your oven to 200°C (180°C fan).

  2. Place the peppers and red onion on a baking tray, drizzle with 2 tbsps of Sweet Chilli Dressing, season, and roast for 20 minutes.

  3. Add the cherry tomatoes to the tray (stirring the veggies up to stop the edges burning) and drizzle with the remaining 1 tbsp of dressing, roast for a further 10 minutes until the veggies are soft and caramelised.

  4. Meanwhile, prepare the cous cous by placing it in a large bowl and pouring over the hot vegetable stock. Cover with a plate and leave for 5 minutes, then fluff with a fork.

  5. Stir the roasted vegetables through the cous cous, scatter with parsley if using, and add a little extra Sweet Chilli Dressing for a burst of flavour.


Serving tip: This salad is just as delicious served warm as it is cold – perfect for making ahead for a picnic or enjoying al fresco with a glass of something chilled.
