Make the most of Raspberry Season

Raspberries are in season and taste wonderful. There is nothing more lovely than the taste of freshly picked, seasonal fruit and vegetables.


Try this salad, it really is delicious with it's sweet and savoury sensation of tastes. From the peppery rocket, spicy chilli roasted walnuts and salty blue cheese to the sweet fresh taste of British Raspberries, all finished off with a drizzle of our Raspberry & Mint dressing - AH-MAY-ZING!



An amazing sensation of taste from sweet raspberries to salty gorganzola. Delicious!


Mixed leaf raspberry salad with gorgonzola and chilli roasted walnuts


90g bag of mixed Rocket, Baby Leaf Spinach and Watercress

½ medium sized red onion, sliced

75g raspberries

70g gorgonzola or blue cheese, crumbled

A handful of chilli roasted walnuts - see below

4-5tbsp Lincolnshire Drizzle Raspberry & Mint dressing

Salt and pepper to taste


Method

Combine the spinach, sliced red onion, raspberries, crumbled gorgonzola and chilli roasted walnuts in a salad bowl.

Add the Raspberry & Mint dressing to the salad and toss well. Top with a few parsley leaves.

Serve immediately.


Homemade chilli roasted walnuts

I made these easy roasted walnuts to use a crunchy topping for this spinach raspberry salad. I was looking for something slightly different so I used our sweet chilli dressing. These homemade roasted walnuts are also great in other salads or simply served as a snack.

100g nuts

2 tbs Lincolnshire Drizzle Sweet Chilli Dressing

Salt & pepper


Method

Pre-heat oven to 180C/350 F

Mix the walnuts and honey together until the walnuts are all covered with the dressing

Season well and place the walnuts on a parchment paper covered baking sheet

Bake for about 15-20 minutes, turning the walnuts at least once during that time
