These Indian-style roast cauliflower & Chickpea flatbreads are the perfect example of comfort food that still nourishes you from the inside out. Warming, colourful and full of flavour, they’re designed to support gut health, which plays a surprisingly big role in supporting mood.

Why This Recipe Works
These flatbreads bring together a mix of plant-based ingredients that naturally support gut health:
Cauliflower and chickpeas are rich in fibre, helping to feed the gut microbiome and support digestion.
Warming spices help add depth and comfort, perfect for colder months when our bodies crave warmth.
To bring it all together, our Indian Spiced Marinade adds layers of flavour without any fuss. Made with cold-pressed rapeseed oil, it naturally contains omega-3, which is linked to brain health and mood support, another small but meaningful boost during winter.

This is the kind of meal that feels cosy and indulgent, while still ticking all the boxes for healthy, nourishing eating. It’s vibrant, satisfying and easy to pull together, ideal for busy weekdays when you want food that supports you rather than weighing you down.

Ingredients
1 head of cauliflower, cut into small floret
Small tin of Chickpeas
5-6 tbsps Drizzle It! Indian Spiced Marinade
1 cup plain yogurt
Juice of half a lemon
1 tsp dried cumin, coriander and parsley
Naan or flatbread
Pickled red onion (see tip)
1 tbsp flaked almonds
Fresh coriander for garnish
Method
In a large bowl toss the cauliflower florets with the Indian Spiced Marinade. Spread evenly on an oven tray and roast for 20-25 minutes at 200°C.
Meanwhile, make the yogurt sauce by stirring together plain yogurt, cumin powder, coriander powder, dried parsley and lemon juice.
To assemble, spread some yogurt sauce onto a warm flatbread. Top with the cauliflower, more yogurt, almond flakes, pickled red onion and fresh coriander.
Tip: for a quick alternative to pickled onion, simply soak very thinly sliced red onion in a Drizzle It! dressing of choice. We like to use Balsamic or Lemon.
