Tasty Moroccan Rice

We've got the perfect pick-me-up to chase away the blues: a delicious and warming Moroccan rice dish. Packed with flavor and comforting spices, this dish is sure to brighten even the gloomiest of days.
So, grab your ingredients and get ready to embrace the coziness of a rainy day with this delightful recipe.

3-4 tbsp Lincolnshire Drizzle Moroccan Sauce, plus extra if liked
1 onion finely sliced
1 large courgette sliced
2 red peppers chopped in large pieces
250g Mushrooms thickly sliced or halved
300g rice
Stock cube
Method
Coat the courgettes, peppers and mushrooms in Moroccan Sauce and roast in the oven for 30-40 minutes until cooked and starting to caramelise.
Meanwhile, fry the onions in the Moroccan sauce for 5 minutes until softened.
Stir in the rice then pour in the stock cube with 700ml boiling water.
Cover the pan and simmer for 10 mins until the rice is tender and has absorbed most of the liquid.
Stir the roasted vegetables through the rice, adding a little more Moroccan sauce into the dish if liked, and serve.
Tips:
Add a handful of chopped almonds or pistachios for extra crunch.
Serve this dish with a dollop of plain yogurt or a drizzle of harissa for an extra kick.
