1. Cajun Chicken Tray Bake

Ingredients:
Chicken thighs or breasts
Baby potatoes, halved
Red onion, sliced
Bell peppers, chopped
Cajun Marinade
Fresh parsley (for garnish)
Method:Marinate chicken in Cajun Marinade for at least 30 minutes. Arrange everything on a baking tray, drizzle with more marinade, roast at 200°C for 35–40 mins. Garnish with parsley.

Ingredients:
Halloumi, cubed
Courgette, red onion, cherry tomatoes
Cajun Marinade
Method:Toss everything in the marinade, thread onto skewers, grill or BBQ for 8–10 mins, turning occasionally. Serve drizzled with extra marinade and with flatbreads and salsa.

Ingredients:
Sweet potato chunks
Tinned chickpeas
Rocket or spinach
Red onion
Cajun Marinade
Method:Toss sweet potato and chickpeas in Cajun marinade and roast for 40-50 minutes, or until caramelised. Layer with greens and onion. Serve warm or cold with extra drizzle on top.

Ingredients:
Salmon fillets
Soft tortillas
Red cabbage slaw
Lime wedges
Cajun Marinade
Method:Marinate salmon, then pan-fry or bake. Flake into tortillas with slaw and a squeeze of lime. Optional: add avocado slices or yoghurt drizzle.

Sour Cream or Mayonnaise
