1. Cajun Chicken Tray Bake


Easy One-Pan Dinner

Ingredients:

  • Chicken thighs or breasts

  • Baby potatoes, halved

  • Red onion, sliced

  • Bell peppers, chopped

  • Cajun Marinade

  • Fresh parsley (for garnish)

Method:Marinate chicken in Cajun Marinade for at least 30 minutes. Arrange everything on a baking tray, drizzle with more marinade, roast at 200°C for 35–40 mins. Garnish with parsley.



2. Cajun Halloumi & Veg Skewers

Vegetarian BBQ Hero

Ingredients:

  • Halloumi, cubed

  • Courgette, red onion, cherry tomatoes

  • Cajun Marinade

Method:Toss everything in the marinade, thread onto skewers, grill or BBQ for 8–10 mins, turning occasionally. Serve drizzled with extra marinade and with flatbreads and salsa.



3. Cajun Chickpea & Sweet Potato Salad

Healthy & Meal-Prep Friendly

Ingredients:

  • Sweet potato chunks

  • Tinned chickpeas

  • Rocket or spinach

  • Red onion

  • Cajun Marinade

Method:Toss sweet potato and chickpeas in Cajun marinade and roast for 40-50 minutes, or until caramelised. Layer with greens and onion. Serve warm or cold with extra drizzle on top.





4. Cajun Salmon Tacos

Speedy Midweek Meal

Ingredients:

  • Salmon fillets

  • Soft tortillas

  • Red cabbage slaw

  • Lime wedges

  • Cajun Marinade

Method:Marinate salmon, then pan-fry or bake. Flake into tortillas with slaw and a squeeze of lime. Optional: add avocado slices or yoghurt drizzle.





6. Cajun Veggie Wraps

Lunchbox Friendly

Ingredients:

  • Mixed veg chopped (courgette, pepper, red onion)

  • Sour Cream or Mayonnaise

  • Tortilla wraps

  • Cajun Marinade

Method:Roast veg in marinade for 45-50 minutes until cooked to your liking. Place onto the wrap and top with Sour Cream or mayonnaise. Great hot or cold.
