Ingredients.
2 salmon fillets
500g new potatoes
10 cherry tomatoes
1-2 tablespoons of Lincolnshire Drizzle Lemon Dressing
1/2 bag of rocket salad.
The subtle flavour of our Lemon Dressing goes so well with salmon, or any fish for that matter. it complements the delicate flavours without over-powering.
Place the salmon fillets onto a large piece of foil, drizzle over the Lemon Dressing and season lightly. Fold the foil around the salmon making a pouch in which to cook the salmon so that all the flavours of the Lemon Dressing can infuse.
Place in a preheated over, 180 C, 160 C fan or gas mark 4 for about 15 minutes, or lightly cooked to your liking.
Meanwhile, gently steam the new potatoes, according to the cooking instructions.
Pile the Rocket onto the plates and scatter over the tomatoes. Drizzle more dressing over the salad.
When the salmon is ready, serve with the salad and cooked new potatoes.
