Creamy Cajun Chicken

Serves 4

Ingredients

4 (7-ounce) boneless skinless chicken breasts

5 tbsp Drizzle It! Cajun Marinade

1 onion finely chopped

1 green red pepper finely chopped

1 stick of celery finely chopped

2 garlic cloves

350ml double cream

25g grated parmesan

chopped parsley for garnish


Method

Coat the chicken in the marinade and put aside for 1/2 an hour or so.


Heat a little more Marinade in a pan over a medium heat. Add the chicken and sear for 3 to 4 minutes on each side, until golden. Remove the chicken from the pan to a plate and set aside.


In the same pan, add another tablespoon of Cajun Marinade along with the onion, pepper, and celery. Saute for 3 to 4 minutes, until the veggies have softened. Add the garlic and saute for another minute.


Add the cream and parmesan cheese, stir together, and bring to a simmer.


Place the chicken back in the pan and cook until heated through, about 5 minutes. Garnish with parsley before serving.
