The perfect side salad

So it's May, and it's chilly, and this time last year the temperatures were soaring!

But we don't let the cooler evenings put us off, we love our salads whether as a main meal, or as a side dish.


You can't beat a simple side salad of Rocket, Parmesan & Balsamic which tastes amazing and yet is so healthy.


With just 8 calories per 2-cup serving, Rocket has virtually no impact on your daily calorie allowance. At the same time, the nutrient-packed greens provide substantial amounts of vitamins A, K and C, folate, calcium, iron, potassium, magnesium and several beneficial phytochemicals. Add to that all the goodness of Rapeseed Oil, which is loaded with vitamin E and Omega 3 fatty acids, and you have the perfect combination of health and taste.


Serve this as a side or starter

Rocket & Parmesan Salad with Balsamic drizzle

Serves 4 as a side salad

200 g baby rocket leaves

75 g parmesan cheese shaved

Toasted Sesame seeds (options)

Method

Place baby rocket in a salad bowl and toss in the Balsamic Dressing

Scatter the Parmesan cheese and sesame seeds if using.
